Hi there,

This is Mars , I am the person in charge of Mafe Ecological coffee farm. We are located in Alishan’s Leye Tribal Community with mountains on all sides and a large stream running below. Fog often forms around 1500~1600 in the afternoon. So our coffee grows more slowly and stays on the trees longer.

Our coffee manor is located at 1200 meters above sea level in a more primitive environment. We currently cultivated SL-34 , Geisha and SL-34 Purple-leaf Mutations.

We do a lot of soil fertility management for the environment of the coffee estate.

What we do in this coffee industry is mainly post-harvesting , fermenting , the roasting of green beans , sample cupping.

Taiwanese coffee beans are dense , and they have great aftertaste. Taiwanese people love to drink tea , so we enjoy drink that come with sweet aftertaste.

We therefore ferment coffee like we ferment tea to produce the mouthfeel we like.

This is how we ferment the washed processed coffee.

Taiwan coffee is clean. If the coffee turns out to be clean, it means that the coffee farmers in terms of coffee production have attained a certain degree of quality.


 Every individual enviroment has its features. Altitudes , exposure of slopes , geographical conditions , soil conditions.

 And the differences in the field management show up in the flavors profiles of different farms. 

That Taiwan is a coffee producing country is just wonderful . 

We have the right conditions to produce small lots that are very high quality, the best coffees in the world.

The next step would be to develop a better variety that is different from the ones in other countries and has its unique flavor profiles. So the world will see that the best coffee origin in Asia is Alishan , Taiwan.

There is a lot of potential. What we can see is that , the overall quality of Taiwanese coffee is close to or even better than what we consider specialty coffee.
